Lassi, a traditional yogurt based drink from India, is more than just a thirst quencher, it’s a refreshing cultural experience in a glass.

Whether enjoyed sweet, salty, or flavoured with fruits and spices, Lassi is cherished for its cooling properties and its role in balancing the body, especially during the hot Indian summers.

This creamy beverage offers a harmonious blend of taste and nourishment, making it a beloved staple in Indian households and an iconic drink worldwide.

What Is Lassi?

Lassi is a yogurt-based drink that is incredibly versatile, enjoyed in various forms across India. At its core, it’s made by blending yogurt with water, resulting in a smooth, light drink. It comes in both sweet and savoury versions, with each bringing its own unique character to the table.

Sweet Lassi, often flavoured with sugar, rose water, or fruit like mango, is the more popular choice, offering a mildly tangy yet smooth taste that’s indulgent and cooling.

Savoury Lassi, on the other hand, is made with salt and sometimes enhanced with spices like cumin, black pepper, and fresh herbs, creating a more robust and refreshing flavour.

The beauty of Lassi lies in its simplicity and adaptability. It can be served plain or infused with a variety of flavours, depending on the region and personal preferences.

Whether it’s a sweet Mango Lassi or a lightly spiced salty version, this drink is perfect for cutting through the heat of the day or calming your stomach after a spicy meal.

Ingredients and Taste

The ingredients for Lassi are deceptively simple but contribute to its refreshing and satisfying nature. The main ingredient is yogurt, which lends the drink its creamy texture and mild tartness. Water or milk is added to thin the yogurt into a drinkable consistency.

For sweet versions, sugar or honey is mixed in, while spices like cardamom or saffron add depth and fragrance. Fruit based Lassis, especially mango, have gained international fame for their vibrant flavour and smooth, rich texture.

Savoury Lassi is often seasoned with salt and spices, like cumin and black pepper, which give it a slightly tangy, earthy flavour. This version is more commonly enjoyed in northern regions of India and is praised for its digestive benefits, especially when paired with spicy meals.

Regardless of the variation, the defining feature of Lassi is its refreshing, cooling effect, with each sip offering a balance of creaminess, tang, and subtle sweetness or spice.

A Taste of History

Lassi has ancient roots in Indian culture, with a history that stretches back thousands of years. Traditionally consumed to combat the scorching heat of the Indian subcontinent, Lassi was originally a way to cool the body and aid digestion.

Yogurt itself has been a staple in Indian diets for centuries, prized for its probiotic qualities and ability to soothe the stomach after heavy or spicy meals. The addition of water, sugar, and spices turned this humble ingredient into a drink that’s not only refreshing but also functional.

Over time, Lassi became deeply embedded in Indian traditions and is often served during special occasions, religious festivals, and family gatherings. The drink’s simplicity allowed it to spread across regions, with each part of India adding its own twist, whether through the use of regional fruits, spices, or methods of preparation.

Mango Lassi, now enjoyed worldwide, is a modern favourite, but traditional versions remain a beloved part of Indian culinary heritage.

Traditional Indian Lassi Recipe

Serves: 4 people

Ingredients:

  • 2 cups plain yogurt (preferably full-fat for a richer taste)
  • 1.5 cups cold water or milk (for a creamier version)
  • 4 tbsp sugar (adjust to taste)
  • 1/4 tsp ground cardamom (optional)
  • A pinch of salt (to balance flavours)
  • Ice cubes (as needed)

For Garnish:

  • Chopped pistachios or almonds (optional)
  • Fresh mint leaves (optional)
  • A sprinkle of ground cardamom or saffron strands (optional)

    Directions

    Step 1

To begin, take a large mixing bowl. Add 2 cups of plain yogurt and whisk it vigorously until smooth and creamy. This step ensures the yogurt is free of lumps and has an even texture, which forms the base of your lassi.

    Step 2

Gradually add 1.5 cups of cold water or milk to the yogurt. Stir or whisk continuously to combine the liquid with the yogurt, ensuring a smooth, flowing consistency. If you prefer a thicker lassi, use less liquid.

    Step 3

Next, mix in 4 tablespoons of sugar, adjusting to taste. If you prefer a less sweet lassi, you can reduce the sugar. Stir well until the sugar is fully dissolved, enhancing the sweetness evenly throughout the drink.

    Step 4

Add a pinch of salt and 1/4 teaspoon of ground cardamom to the mixture. The salt helps balance the flavors, while the cardamom brings an authentic aromatic touch to your lassi, elevating its traditional taste.

    Step 5

Continue stirring or whisking for another minute, or until all the ingredients are fully combined. If you prefer a frothy texture, use a blender for this step, blending for 20-30 seconds to achieve a light and airy finish.

    Step 6

To chill the lassi, add a few ice cubes to the mixture or chill it in the refrigerator for 30 minutes before serving. This will enhance its refreshing quality, making it perfect for warm days.

    Step 7

Prepare your serving glasses by garnishing the rims with chopped pistachios or almonds for added crunch and a touch of elegance. You can also sprinkle a little extra ground cardamom or saffron strands on top for a beautiful and aromatic finish.

    Step 8

Pour the lassi into the chilled glasses and garnish with fresh mint leaves if desired. Serve immediately, enjoying the balance of creamy, sweet, and aromatic flavors. Lassi pairs well with spicy Indian dishes or can be enjoyed on its own as a refreshing treat.
