Tavuk Şiş, or Turkish chicken skewers, is a dish that captures the essence of Turkish grilling traditions.

These skewers offer a wonderful blend of succulent marinated chicken and charred flavours, delivering an experience that’s both satisfying and deeply rooted in Turkey’s rich culinary heritage.

Whether enjoyed at a bustling street market or around a family table, Tavuk Şiş is more than just grilled chicken, it’s a taste of Turkey’s vibrant food culture.

What Is Tavuk Şiş?

Tavuk Şiş, directly translated to “chicken skewer,” is a classic Turkish dish where marinated pieces of chicken are threaded onto skewers and grilled over open flames. The marinade is where the magic happens, as it tenderizes the meat while infusing it with a distinctive blend of Turkish flavours.

Yogurt, olive oil, garlic, and a blend of spices create a marinade that not only keeps the chicken juicy but also gives it a beautiful balance of tangy, earthy, and slightly smoky notes.

Traditionally, Tavuk Şiş is grilled over charcoal, giving the chicken a delicate char that enhances its flavour. It’s typically served with a side of warm flatbread, a fresh salad, and a sprinkle of sumac or a wedge of lemon for a touch of brightness.

While it’s a simple dish at heart, Tavuk Şiş offers layers of flavour that make it both a comforting staple and an unforgettable culinary experience.

Ingredients and Taste

The core ingredients in Tavuk Şiş are straightforward yet carefully selected to bring out the best in the dish.

Chicken breast or thigh meat is commonly used, marinated in a mixture of yogurt, olive oil, garlic, and a combination of spices such as cumin, paprika, and sometimes a hint of red pepper flakes for subtle heat.

The yogurt plays a key role here, as it tenderizes the meat, allowing it to remain juicy even after grilling.

The taste of Tavuk Şiş is a balance of savoury and tangy, with the yogurt adding a slight acidity that complements the earthy spices. Each bite offers a satisfying charred flavour from the grill, while the marinated chicken remains tender and moist.

Accompanying sides like fresh tomatoes, red onion, and flatbread add freshness and texture, enhancing the skewers without overshadowing their flavour. The result is a meal that is both simple and layered, each element adding to a cohesive and satisfying experience.

A Taste of History

The origins of Tavuk Şiş can be traced back to Turkey’s deep rooted traditions of grilling and outdoor cooking, practices that date back to the days of nomadic tribes who would cook over open fires.

The technique of skewering and grilling meat has been a part of Turkish culinary culture for centuries, becoming an art form that showcases the country’s rich variety of spices and marinades.

Tavuk Şiş is one of many types of “şiş” (skewer) dishes in Turkish cuisine, each reflecting the region’s history as a crossroads between Asia and Europe.

The use of yogurt in the marinade, for instance, is a common technique in Turkish cooking, drawing on dairy’s natural ability to tenderize meat and infuse it with flavour.

This approach reflects the resourcefulness of Turkish cooks, who have mastered the balance of simplicity and flavour over generations.

Turkish Tavuk Şiş (Chicken Skewers) Recipe

Serves: 4 people

Ingredients:

For the Marinade:

  • 500g boneless chicken breast or thigh, cut into 1-inch cubes
  • 1/2 cup plain yogurt
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp ground coriander
  • 1/2 tsp chili flakes (optional, for a bit of heat)
  • Salt and black pepper to taste
  • Juice of half a lemon

For the Skewers:

  • Wooden or metal skewers (soaked in water if using wooden)

Optional Garnishes:

  • Fresh parsley, chopped
  • Lemon wedges for serving

    Directions

    Step 1

In a large bowl, combine the yogurt, olive oil, minced garlic, tomato paste, ground cumin, paprika, ground coriander, chili flakes (if using), salt, and black pepper. Mix thoroughly until smooth. The yogurt tenderizes the chicken, while the spices add deep flavour.

    Step 2

Add the cubed chicken to the marinade, making sure each piece is fully coated. Cover the bowl with plastic wrap and let the chicken marinate for at least 1 hour in the refrigerator, or overnight for the best flavour.

    Step 3

If you’re using wooden skewers, soak them in water for at least 30 minutes before grilling. This prevents them from burning on the grill. For a more traditional touch, metal skewers are often preferred as they evenly transfer heat to the chicken.

    Step 4

Preheat a grill or oven to 400°F (200°C). Lightly oil the grill grates or use a baking tray lined with foil if cooking in the oven.

    Step 5

Thread the marinated chicken cubes onto the skewers, leaving a small gap between each piece for even cooking. Avoid overcrowding to ensure that the chicken cooks evenly and gains a nice char.

    Step 6

Place the skewers on the preheated grill or baking tray. Grill for about 10-12 minutes, turning occasionally to cook all sides, until the chicken is charred and cooked through. If using the oven, bake for about 15-20 minutes, finishing with a quick broil for 2 minutes to achieve a slight char.

    Step 7

Check the internal temperature of the chicken, which should reach 165°F (74°C) to ensure it's fully cooked. Remove the skewers from the heat and let them rest for a couple of minutes to retain their juices.

    Step 8

Serve the Tavuk Şiş hot, garnished with chopped fresh parsley and a side of lemon wedges. Tavuk Şiş pairs beautifully with flatbread, rice, or a fresh salad. A drizzle of extra yogurt sauce or a side of tangy sumac onions enhances the authentic flavors.
