Souvlaki, Greece’s beloved grilled meat skewers, is a dish that captures the essence of Greek cuisine: simple, flavourful, and deeply satisfying. Marinated in olive oil, lemon juice, and herbs, then charred to perfection over an open flame, Souvlaki offers a taste experience that’s hard to resist.

Whether wrapped in warm pita with fresh vegetables or enjoyed straight off the skewer, this Greek classic is a culinary celebration of Mediterranean flavours and hospitality.

What Is Souvlaki?

Souvlaki, which means “small skewer” in Greek, is a dish of marinated meat; often pork, chicken, or lamb, grilled on skewers until beautifully caramelized. The marinade is essential, infusing the meat with fresh lemon juice, olive oil, garlic, and aromatic herbs like oregano.

These skewers are a staple in Greek street food and can be served in various ways. Some prefer them wrapped in a pita with tomatoes, onions, and a dollop of tzatziki, while others enjoy them as a main dish with sides like salad, rice, or grilled vegetables. Whichever way you choose to enjoy it, Souvlaki is a flavourful and versatile dish that’s always a crowd pleaser.

The magic of Souvlaki lies in its simplicity. Each skewer is prepared with care, allowing the flavours of fresh ingredients and carefully selected seasonings to shine. It’s a dish that showcases the richness of Greek cuisine through straightforward, honest flavours that are enhanced by the cooking technique.

Ingredients and Taste

Souvlaki’s ingredients are few but impactful. The key component is the marinade, which combines Greece’s iconic olive oil with zesty lemon juice, minced garlic, and dried oregano. These ingredients don’t just add flavour, they help tenderize the meat, making each bite juicy and succulent.

Salt and pepper are added for balance, while the grill imparts a subtle smokiness that enhances the taste. Once cooked, Souvlaki is incredibly aromatic, with the herbs and garlic mingling beautifully with the caramelized edges of the meat.

The flavour is a perfect harmony of tangy lemon, earthy oregano, and the savoury richness of olive oil. If served in pita, the skewers are often accompanied by fresh tomatoes, onions, and a spoonful of creamy tzatziki, which adds a refreshing contrast to the smoky, juicy meat.

The combination of textures, from the charred meat to the soft pita and crunchy vegetables, makes every bite a layered experience of flavours and sensations.

A Taste of History

Souvlaki has deep roots in Greek history, tracing back to ancient times when Greeks would cook meat on small skewers over open flames. Archaeological finds reveal that as early as the Byzantine era, Greeks were skewering and grilling meats much like they do today, a tradition that’s been preserved and cherished for centuries.

The simplicity of Souvlaki, relying on quality ingredients and straightforward preparation, reflects the Greek approach to food, which values flavour, freshness, and authenticity.

Throughout Greece, Souvlaki is more than just a meal; it’s part of a culture of gathering and sharing food with loved ones. You’ll find it everywhere, from bustling street food stalls in Athens to family kitchens across the countryside, making it a dish that’s accessible to all.

Its popularity has only grown, with each region in Greece adding its own touch, whether by using different meats, marinades, or serving styles.

Souvlaki (Grilled Meat Skewers) Recipe

Serves: 4 people

Ingredients:

  • 500g pork shoulder or chicken breast, cut into 1-inch cubes
  • 3 tbsp olive oil
  • Juice of 1 large lemon
  • 3 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp ground black pepper
  • 1/2 tsp sea salt
  • Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes before grilling)

    Directions

    Step 1

In a large mixing bowl, add the olive oil, lemon juice, minced garlic, oregano, thyme, black pepper, and sea salt. Whisk the ingredients together until they are well combined. This marinade brings a classic Greek flavour with its citrus and herb blend.

    Step 2

Add the cubed pork or chicken to the bowl with the marinade, ensuring each piece of meat is fully coated. Use your hands to massage the marinade into the meat gently, allowing the flavours to penetrate. Cover and refrigerate for at least 1 hour, ideally up to 4 hours for maximum flavour.

    Step 3

While the meat marinates, prepare your grill or preheat your oven to 220°C (425°F) if you prefer oven grilled skewers. Ensure your grilling grate is clean and oiled to prevent the skewers from sticking.

    Step 4

Thread the marinated meat onto the skewers, spacing the pieces slightly to allow even cooking on all sides. Avoid overcrowding the skewers, as this may affect the cooking time and flavour.

    Step 5

If grilling, place the skewers over medium-high heat, turning every 2-3 minutes to ensure even cooking. If using the oven, place the skewers on a lined baking sheet and cook for 15-20 minutes, turning halfway through.

    Step 6

Continue grilling or roasting until the meat is golden brown and cooked through, about 10-12 minutes depending on the thickness of the cubes. The meat should have a slight char for authentic flavour.

    Step 7

Remove the skewers from the grill or oven and allow them to rest for a few minutes. Resting helps the juices settle, ensuring each bite is juicy and flavourful.

    Step 8

Serve the souvlaki skewers on a platter, garnished with fresh lemon wedges for extra zest. Accompany with pita bread, tzatziki sauce, and a sprinkle of fresh parsley or dill for added flavour.
