I’m Demhaj Junior, the founder and writer behind DelishGlobe. I created this site after spending years reading about global cuisines and realising that most English-language food content skips the part that interests me most, the why behind a dish: the history, the geography, the family traditions, and the moments that made a recipe worth preserving.

My Background

My interest in food culture began long before I ever thought about writing about it. Growing up surrounded by family cooking that blended West African ingredients with techniques gathered across different countries and kitchens, I learned early that a meal is never just food. It carries memory, identity, and a sense of where you belong. The dishes on our table told stories, about where our family had been, what they had brought with them, and what they had learned along the way.

That environment taught me to pay attention to food differently. While other people saw a finished plate, I saw questions: where did this spice come from, why is this technique done this particular way, and who first decided to put these ingredients together? Those questions stayed with me and eventually pushed me toward a much broader study of global cuisines, not just the recipes, but the geography, the agriculture, the trade routes, and the social histories that shaped what people eat and why.

Over the years I have read widely across culinary history, food anthropology, and regional cooking traditions. I have spent considerable time testing dishes in my own kitchen, tracing the documented origins of recipes, and learning from the accounts of home cooks and food historians. That combination of research and hands-on practice is what informs everything I publish on DelishGlobe. I do not write about food as an outsider looking in, I write about it as someone who has spent years genuinely studying it.

What DelishGlobe Is

DelishGlobe is a food discovery website built around traditional dishes, authentic recipes, and the cultural history that gives food its real meaning. This is not a site about quick weeknight dinners or recipes that follow whatever is trending on social media. The focus here is on dishes that have existed for generations in their home regions, foods that have earned their place at the table through time, through repetition, and through the real lives of the people who cook them.

Every article on DelishGlobe is built around three questions: what is this dish, where does it come from, and why does it matter? The answers to those questions are what separate food writing that genuinely informs from food writing that simply lists ingredients. Understanding a dish properly means understanding the region it comes from, the staple ingredients available there, the historical events that influenced local cooking, and the rituals and occasions the food is tied to.

Alongside that cultural and historical context, each piece includes practical content; recipe guides, ingredient explanations, preparation notes, and flavour descriptions, so that readers who want to cook what they are reading about have everything they need to do so. The aim is to make unfamiliar cuisines feel genuinely accessible, without reducing them to something oversimplified or stripped of the detail that makes them worth exploring in the first place.

DelishGlobe covers food from every region of the world. West African stews, Southeast Asian street food, Middle Eastern mezze, South American grains, Eastern European fermented dishes, the scope is deliberately broad, because the goal is to reflect how rich and varied global food culture actually is. No single cuisine gets treated as more important or more worthy of attention than another.

How I Research and Write

Every piece published on DelishGlobe is researched before a single sentence is written. My process involves cross-referencing culinary history sources, documented regional food guides, academic food studies, and first-hand accounts from people who cook these dishes as part of their everyday lives. When a dish has a complex or contested history, I dig into multiple sources and present what the evidence most consistently shows.

One of the things that motivated me to build DelishGlobe was how much food writing flattens or oversimplifies cuisines that deserve far more depth. A dish labelled simply as “African” or “Asian” tells a reader almost nothing useful. Africa has 54 countries and thousands of distinct food traditions. Asia stretches from Turkey to Japan. Getting the specifics right — the actual country, the specific region, the ethnic or cultural group the dish belongs to, is something I take seriously in everything I publish.

DelishGlobe is a solo-run publication. The research, the writing, the recipe testing, and the editorial decisions are all done by me. That means the content has a consistent voice and a genuine point of view, rather than the kind of generic output that comes from publishing for volume alone. I would rather publish fewer pieces that are genuinely useful and well-researched than fill a site with content that tells people nothing they couldn’t have found with a basic search.

I update articles regularly as I come across better information or more detailed sources. Food history is a living field, and the understanding of where certain dishes originated, how they spread, and how they have changed over time is constantly being refined by researchers and food scholars. Keeping that information current is part of what makes DelishGlobe a site worth returning to.

Why Food Culture Matters

Food is one of the most direct ways to understand how a group of people lives. The crops that grow in a particular climate, the animals that are raised there, the spices available through trade, the religious practices that shape what is eaten and when, all of these things come together in what ends up on the plate. Reading a cuisine carefully is, in many ways, reading a culture’s entire history in miniature.

That is why I believe food writing that goes beyond the recipe level actually serves readers in a meaningful way. Someone who learns that a dish like injera has been a staple of Ethiopian and Eritrean life for centuries, that its sour fermented flavour is a product of the local teff grain, and that it functions as both plate and utensil in a communal eating tradition, that person comes away with genuine knowledge. They understand something real about East African culture that they did not know before. That kind of understanding is what DelishGlobe is built to create.

Food is also one of the easiest entry points into curiosity about the wider world. A reader who tries making a Moroccan tagine at home, or who reads about the history of Japanese miso, or who learns where jerk seasoning actually comes from, that reader is more connected to the places and people behind those dishes than they were before. DelishGlobe exists to make that connection happen more often, for more people, through well-researched and genuinely engaging food content.
