  • To begin, take a large mixing bowl. Add 2 cups of plain yogurt and whisk it vigorously until smooth and creamy. This step ensures the yogurt is free of lumps and has an even texture, which forms the base of your lassi.
  • Gradually add 1.5 cups of cold water or milk to the yogurt. Stir or whisk continuously to combine the liquid with the yogurt, ensuring a smooth, flowing consistency. If you prefer a thicker lassi, use less liquid.
  • Next, mix in 4 tablespoons of sugar, adjusting to taste. If you prefer a less sweet lassi, you can reduce the sugar. Stir well until the sugar is fully dissolved, enhancing the sweetness evenly throughout the drink.
  • Add a pinch of salt and 1/4 teaspoon of ground cardamom to the mixture. The salt helps balance the flavors, while the cardamom brings an authentic aromatic touch to your lassi, elevating its traditional taste.
  • Continue stirring or whisking for another minute, or until all the ingredients are fully combined. If you prefer a frothy texture, use a blender for this step, blending for 20-30 seconds to achieve a light and airy finish.
  • To chill the lassi, add a few ice cubes to the mixture or chill it in the refrigerator for 30 minutes before serving. This will enhance its refreshing quality, making it perfect for warm days.
  • Prepare your serving glasses by garnishing the rims with chopped pistachios or almonds for added crunch and a touch of elegance. You can also sprinkle a little extra ground cardamom or saffron strands on top for a beautiful and aromatic finish.
