Ingredients
  

  • 2 large tomatoes diced
  • 1 large cucumber peeled and diced
  • 1 green bell pepper seeded and diced
  • 1 small red onion finely chopped
  • 1/4 cup fresh parsley finely chopped
  • 1/4 cup fresh mint leaves finely chopped
  • 1/4 cup olive oil
  • 2 tbsp fresh lemon juice or juice of 1 lemon
  • Salt and black pepper to taste
  • Optional: 1/4 cup crumbled feta cheese or olives for garnish

Instructions
 

  • To begin, gather all your ingredients and prepare a large mixing bowl. Rinse the vegetables thoroughly under cold water and pat them dry with a clean towel to ensure freshness in each bite.
  • Dice the tomatoes into small cubes, aiming for uniformity for consistent texture. Place the diced tomatoes in the mixing bowl. This will be the juicy base for the salad, providing a burst of flavour.
  • Peel the cucumber, leaving alternating strips of skin for added texture if desired. Dice the cucumber into similarly sized cubes and add them to the bowl. The cucumber will add a refreshing crunch to the salad.
  • Cut the green bell pepper in half, remove the seeds, and dice it finely. Add the diced bell pepper to the bowl, which will provide a slightly sweet and peppery flavour.
  • Finely chop the red onion and add it to the mix. For a milder flavour, soak the chopped onion in cold water for a few minutes before adding it to the salad, then drain and add to the bowl. This helps reduce the sharpness of the onion.
  • Finely chop the fresh parsley and mint leaves, discarding any large stems. Add the herbs to the bowl, giving the salad a vibrant colour and a fresh, aromatic quality that complements the vegetables.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper until emulsified. Pour this dressing over the salad, gently tossing to ensure each ingredient is coated. Adjust salt and pepper to taste if needed.
  • Transfer the Çoban Salatası to a serving dish. Optionally, garnish with crumbled feta cheese or olives to add a savoury, Mediterranean touch. Serve immediately alongside grilled meats, kebabs, or as a refreshing standalone dish.
